Chirashi (Scattered) Sushi with Orange and Watercress
Ingredients For two people servings

For the Sushi rice:
Rice 150g
Water 180ml
Vinegar 1 2/3 tbsp
Sugar 1 tbsp
Salt 1/2 tsp

For filling:
Orange 1/2
Soy sauce 2 tsp
Watercress 40g

Chirashi sushi is a dish for celebrations in Japan. It is often served for family celebrations or guests. Although boiled prawns, sashimi, shellfish are common ingredients for the dish, it is more colorful and enjoyable to eat when using vegetables only for ingredients. Ingredients can be anything as long as you have vinegared rice. How about Western-style sushi using pickles and nuts?

How to make it

  • Rinse rice for a few times in cold water and put it into a pot and pour water. Close the lid before cooking and cook it at high heat. When it starts boiling, reduce the heat to low and cook for 10 minutes. Turn off the heat and leave it for 10 minutes to let it steam without opening the lid.

  • Put vinegar, sugar and salt in a bowl and mix to make the sushi vinegar. Then put the rice (1) into the shallow bowl and mix with the mixture of sushi vinegar to take the heat off.

  • Slice orange into 1-cm thickness and then cut it into half. Toss soy sauce and leave it for 5 minutes to blend.

  • Cut watercress in 3 to 4 cm long and drain excess liquid of (3). Then mix them into (2) sushi rice and put it on the plate.
